After a hiatus of much too long, we are thrilled to offer another lovely coffee grown by our friend Ana Mustafa and her family at Fincas Mustafa in Risaralda, Colombia. We launched Servant Coffee with multiple of Ana’s coffees on the menu back in 2019, so our relationship goes back to the very beginning of our coffee journey.
Ana’s grandmother, Faustina Mejía, the daughter of a local farmer, married Abdul Fattah Mustafá, a Palestinian immigrant in La Celia, Risaralda. They eventually started to produce coffee and were beneficiaries of what is known as the 1970’s ‘Coffee Bonanza’, a decade that saw spectacular growth in Colombia’s coffee production due to rise of the prices in the international markets. The operation grew and was sustained by Ana’s father James and uncle Mayed Mustafá in a technically intensive, yet organizationally outdated, production model. Ana, as the third generation in charge of the operation, has been modernizing production and refining the business model by switching to differentiated coffees, changing the agricultural practices and improving their commercial strategies to achieve a sustainable rural business.
This estate lot comes from La Celia and Pereira, in the Risaralda region, and demonstrates some classic flavors we’ve come to love from the Colombia and Castillo varieties commonly grown in the area. We get the mild sweetness and pleasant acidity of red apple up front, which develops some warm spice notes of cinnamon and hazelnut as the experience progresses, and the medium body and good mouthfeel leave us with a pleasant, creamy finish.
This lot was grown at an elevation of around 1550 MASL and is picked over the course of 4 days and processed through a ‘double washing’ system. The coffee is then slowly dried, yielding a sweet, balanced cup.
