While the pandemic times have made many things challenging, including sourcing coffee, we’ve realized a silver lining here at Servant. Unrest in Colombia continues to make coffee difficult to get and the humanitarian crisis in Myanmar has made exporting coffee impossible this harvest season, but we are still able to get our hands on some fantastic coffees from Peru. We had started exploring Peruvian coffees late last year, and the continuing logistics issues around the world have allowed us space to dive deeper into coffees from this unique and rapidly maturing part of the coffee world.
Our Flourish and Tribute blends have been incorporating Peruvian coffees for the past few months, and we’re excited to release another single origin coffee from the Cajamarca region in the northern part of the country. Presbitero Herrera Torres owns 3 hectares of land in the village of San Francisco in the Huabal district of Cajamarca. Presbitero manages the picking at his farm with the help of his family and hires some seasonal pickers who live in a nearby village. Once picked, he preferments his coffee in the cherries overnight before depulping and then fermenting in tanks for 24 hours. The coffee is then washed and placed on mats to dry in the sun, which takes between 10 and 15 days. While this coffee is not organic certified, Presbitero does not apply any chemical fertilizer, pesticide or fungicide and applies a compost mixture as a fertilizer.
This is a naturally processed coffee of the Catuai variety, and thus it does not disappoint in the fruitiness and sweetness departments. It took us a while to really dial in the roast for this incredibly fruity coffee, but once we did we love the dark grape and ripe strawberry sweetness, nice body, and buttery mouthfeel with a little hint of savory on the finish.
