Honduras is the largest producer of coffee in Central America, and the 4th largest producer of coffee in the world, with coffee representing a full 1/3rd of the country’s agricultural GDP. Primarily known for producing commercial-grade Arabica coffee, Honduras has risen over the past 2 decades to produce some very high-quality specialty grade coffees.
This micro lot, which we call ‘Stargazer’, was grown by Olvin Godoy on his family farm Villa Bonita in Las Vega, Santa Barbara. Olvin is part of a traditional coffee-growing family and is the third generation of his family to grow coffee. Olvin began working alongside his grandfather because he had a passion for growing coffee since he was a young child. When Olvin graduated from high school, he began working permanently on the farm and continues to improve the quality of the coffees and other agricultural products they grow. Our friends at Benefico San Vicente handled the processing/milling of the coffee, and Copan Trade helped us get the coffee stateside and to our warehouse.
Grown at 1450-1500 MASL and comprised primarily of the Pacas variety, Stargazer is a fully washed coffee. Discovered in 1949 on a farm owned by the Pacas family in the Santa Ana region of El Salvador, Pacas is a natural mutation of Bourbon. Similar to other widely cultivated Bourbon varieties, Pacas has a single-gene mutation that causes the plant to grow smaller, leading to higher potential yields and the possibility of placing plants closer together to increase total fruit production on a farm.
We like the brightness of nectarine up front, combined with the refreshing florality of honeysuckle and raw sugar-like sweetness on the finish. Thanks to Olvin and his family for their dedication to their craft, and we hope you enjoy the fruits of their labor as much as we do.
